Stuffed Air Fryer Bell Peppers

Ingredients

  • 3 medium tri-color bell peppers
  • 1 tablespoon olive oil
  • ½ medium yellow onion diced
  • 1 lb ground turkey
  • ½ teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ½ tablespoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 4 oz can diced green chiles
  • 10 oz red enchilada sauce
  • 1 ½ cups cooked rice
  • 1 cup black beans rinsed and drained
  • ¾ cup frozen corn
  • 1 cup shredded Colby jack cheese
  • Chopped parsley for garnish

Instructions

  • Slice the bell peppers vertically into halves and remove the core and seeds inside and set it aside.
  • Heat a large skillet over medium flame. Add oil, followed by onion. Cook the onions until they turn translucent.
  • Add the ground turkey and cook for 4-5 minutes. Stir in the spices; garlic powder, cumin, chili powder, salt, pepper, green chilies, and enchilada sauce. Allow the mixture to simmer for 3-5 minutes.
  • Add the cooked rice, black beans, and corn, and cook for a minute until everything comes together.
  • Fill the bell peppers with the turkey mixture and arrange them on the air fryer basket.
  • Air fry the stuffed pepper at 360 degrees F on a preheated air fryer for 10 minutes.
  • After 10 minutes, remove the air fryer basket and top the bell peppers with the cheese. Place the air fryer basket again and cook for 2-4 minutes until the cheese has completely melted.
  • Once done, transfer the stuffed bell peppers to a serving platter and garnish with parsley and serve

Notes

  • Choose bell peppers that are firm, vibrant in color, and free from blemishes. This ensures that they hold their shape and texture during the cooking process.
  • Preheat the air fryer to ensure even cooking and a crispy exterior.
  • Be sure to cook the ground turkey thoroughly.
  • If you prefer a milder or spicier flavor, feel free to adjust the amount of chili powder or other spices according to your taste preferences.
  • Don't overstuff the peppers and leave a little room at the top for the cheese.
  • Add the cheese to the stuffed peppers during the last few minutes of cooking. 
  • After removing the stuffed peppers from the air fryer, allow them to rest for a few minutes before serving. 
  • Sprinkle chopped parsley or cilantro on top for a fresh and vibrant touch.
