Ingredients

For Vanilla Flavor

  • 1 cup whole milk cottage cheese
  • ½ cup heavy cream
  • 2 tablespoons vanilla syrup
  • 1 teaspoon vanilla paste
  • 1 medium sliced banana frozen
  • 2 tablespoons rainbow sprinkles

For Strawberry Flavor

  • 1 cup whole milk cottage cheese
  • ½ cup heavy cream
  • 2 tablespoons vanilla syrup
  • ½ cup chopped strawberries divided

For Chocolate Peanut Butter Flavor

  • 1 cup whole milk cottage cheese
  • 1 medium sliced banana frozen
  • ½ cup heavy cream
  • 2 tablespoons vanilla syrup
  • 2 tablespoons peanut butter
  • 2 tablespoons cocoa powder
  • cup milk chocolate chips

Instructions

For Vanilla Flavor:

  • In a food processor combine cottage cheese, heavy cream, vanilla syrup, and vanilla paste. Blend on high speed and the frozen banana slices and blend until smooth and creamy.
  • Transfer the ice cream mixture to a freezer-safe container and freeze it for at least 4 hours.
  • Before serving the ice cream, thaw the ice cream for at least 20 minutes and then scoop and transfer it to a bowl.
  • Top the ice cream with sprinkles and enjoy.

For Strawberry Flavor:

  • In a food processor combine cottage cheese, heavy cream, vanilla syrup, and ¼ cup of chopped strawberries. Blend on high speed until smooth and creamy.
  • Transfer the ice cream mixture into a freezer-safe container and add the remaining strawberries and fold them into the mixture. Freeze it for at least 4 hours.
  • Before serving the ice cream, thaw the ice cream for at least 20 minutes and then scoop it into a bowl and enjoy.

For Chocolate Peanut Butter Flavor:

  • In a food processor combine cottage cheese, heavy cream, vanilla syrup, frozen banana, peanut butter, and cocoa powder. Blend on high speed until smooth and creamy.
  • Transfer the ice cream mixture into a freezer-safe container and add the chocolate chips and fold them into the mixture. Freeze it for at least 4 hours.
  • Before serving the ice cream, thaw the ice cream for at least 20 minutes and then scoop it into a bowl and enjoy.

Notes

    • Opt for whole milk cottage cheese with a higher fat content. This will result in a creamier and smoother ice cream texture.
    • To achieve a smooth and homogeneous ice cream base, thoroughly blend the cottage cheese, cream, and other ingredients. This will help eliminate any lumps and create a silky consistency. 
    • For chunks of strawberry, nuts or chocolate chips, stir in after the base has been properly blended. 
    • Make sure the banana slices are frozen solid before adding them to the blender. This will help create a creamy texture and enhance the sweetness.
    • Experiment with different flavors and add-ins to create your favorite combinations. Whether it's fresh fruits, chocolate, nuts, or extracts, feel free to get creative and personalize your cottage cheese ice cream.
    • When incorporating flavorings like vanilla extract, cocoa powder, or fruit purees, add them gradually and taste as you go. This way, you can achieve the desired intensity without overpowering the ice cream.
    • Since we are not using an ice cream maker, freeze the mixture for at least 4 hours. 
    • Stir the ice cream every 30 minutes during the initial freezing process to break up ice crystals and achieve a smoother texture.
    • When you're ready to enjoy the cottage cheese ice cream, take it out of the freezer for about 10 minutes to let it soften slightly. This will make it easier to scoop and enhance the creaminess.
    • Enjoy your ice cream within a few days.
