Ingredients

  • 1 lb cod fillet cut into strips
  • 1 egg
  • ¾ cup gluten-free panko breadcrumbs
  • ¼ cup parmesan cheese grated
  • 1 teaspoon cajun seasonings
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Oil is to deep
  • Chopped parsley to garnish

Instructions

  • Pat dry the fish fillet with a kitchen towel and set it aside.
  • Prepare the breading station: In a bowl whisk the egg and in another bowl combine the panko bread crumbs, parmesan cheese, cajun seasonings, garlic powder, salt, and pepper. Set it aside.
  • Dredge the fish into the egg mixture and then in the panko mixture and gently press it until evenly coated. Repeat the same with the remaining fish strips.
  • Heat a deep wok with oil. Once the oil is hot enough gently add the fish and fry until the fish turns golden and crispy.
  • Once done, transfer the fish to a serving platter and garnish with parsley and serve it with french fries and your favorite dip on the sides.

Notes

  • If using frozen fish, thaw completely before proceeding with the recipe.
  • Cut the fish strips into similar sizes for even cooking.
  • Dry the fish with paper towels or a kitchen towel before dredging.
  • Use one hand for the wet batter and the other hand for the panko.
  • Heat the oil to between 350 and 375 degrees F.
  • Fry the fish strips 5 to 6 minutes.
  • Flip the fish as needed to brown on all sides.
  • Use tongs or a slotted spoon to remove the fish from the oil.
  • Drain the fish on paper towels or a wire rack and serve immediately.
  • Serve with tarter sauce, tzatziki sauce, ketchup or your favorite dip.
