Ingredients

  • 1 ½ lbs. Yukon gold potatoes
  • ¾ teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¾ teaspoon ground black pepper
  • ¾ cup grated parmesan cheese divided
  • ¼ cup olive oil
  • ½ teaspoon crushed red pepper flakes
  • 2 tablespoons fresh parsley chopped

Instructions

  • Preheat the oven to 350 degrees F. Grease a 9X13 baking dish and keep it aside.
  • Wash the potatoes and dry them with a kitchen towel. Slice the potatoes in half and then score them into diagonal slits without cutting them all the way through. Set it aside.
  • In a large bowl, combine the seasonings; oregano, onion powder, garlic powder, salt, pepper, half of the parmesan cheese, and olive oil. Mix it well.
  • Add the scored potatoes and coat them well with the parmesan mixture.
  • Place the remaining parmesan cheese on a plate and dip the scored side of potatoes in the parmesan cheese.
  • Transfer the potatoes to the greased baking dish, scored side facing down.
  • Bake the potatoes for 35-40 minutes until the potatoes are cooked through and the top part is golden and crispy.
  • Once done, season the potatoes with crushed red pepper flakes and garnish with parsley.
  • Serve the parmesan crushed potatoes with sour cream to enjoy.

Notes

  • When scoring the potatoes, be careful not to cut them all the way through.
  • Use freshly grated parmesan for the best flavor.
  • Adjust the seasoning to taste, and add in your favorite spices.
  • Use freshly grated or minced garlic in place of garlic powder if preferred.
  • Swap the olive oil for melted butter if preferred.
  • Bake the potatoes face down in a single layer.
  • Select a baking dish that is large enough for all of your potatoes.
  • Cook these in a cast iron skillet in the oven if preferred.
  • You do not need to flip the potatoes during cooking.
  • Adjust the amount of red pepper to control the heat level. Omit if you don’t want spicy potatoes.
