Ingredients

  • 3 medium-large yellow onion
  • ¾ cup all-purpose flour
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 2 whole eggs at room temperature
  • 1 ½ cups panko bread crumbs pulsed in food processor

Instructions

  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper and set it aside.
  • Wash and peel the skin of the onions. Cut the onion into ½-inch thick slices and separate the inner parts and discard the smaller inner parts. Set it aside.
  • In a breading pan, combine flour, paprika, onion powder, salt, and ground pepper. In the second breading pan, whisk the eggs. In the third breading pan, place panko bread crumbs and keep them ready.
  • Dredge the onion rings in the flour mixture, then the egg and then the breadcrumbs and coat the onion rings evenly. Repeat the same with the remaining onion rings.
  • Place the onion rings on the prepared baking sheet and coat them with cooking spray.
  • Bake the onion rings for 18-20 minutes until the edges start to brown.
  • Once done, serve the onion rings with ketchup on the side.

Notes

  • Slice the onion rings to a uniform thickness, so they cook evenly. ¼ to ½ inch rings work the best.
  • Soaking the sliced onions in buttermilk can help soften them if you prefer tender onions.
  • Pulse the panko in the food processor for a bit to get finer crumbs with incredible crunch.
  • Swap out the seasoning for your favorite herbs and spices.
  • Add grated parmesan to the breadcrumbs for even more flavor.
  • Having trouble getting the breadcrumbs to stick? Whisk a tablespoon of mayonnaise into the egg mixture, and they will stick like glue!
  • Place smaller onion rings inside larger onion rings to save space on your baking sheet.
  • If using two baking sheets, rotate them halfway through cooking.
  • There is no need to flip the onion rings during cooking.
  • Cook the onion rings on an oven proof baking rack for an even crispier coating.
  • If the coating begins to brown before the onions are tender, you can tent the baking sheet with foil.
  • Dice and freeze the small bits from the center of the onions to use in other recipes. They can be tossed right in without thawing.
