Crispy air fryer southwest egg rolls are loaded with chicken, corn, black beans and a zesty Tex Mex seasoning blend. The homemade egg roll recipe is then air fried until it’s crispy and delicious, with no excess oil needed.
In a large bowl, combine the chicken, cream cheese, black beans, corn, cheddar cheese, onion, jalapenos, cilantro, taco seasoning, and lime juice. Mix it until everything comes together.
Place an egg roll wrapper on a cutting board, and wet the edges of the wrapper with water.
Add 2-3 tablespoons of prepared chicken mixture to the center of the egg roll wrapper. Roll once and fold the side ends inwards. Now tightly roll the wrapper and seal the edges.
Brush the egg rolls generously with olive oil and place them in the Air Fryer basket.
Cook for 12-15 minutes by flipping the egg rolls halfway through and cook further until the egg rolls turn golden and crispy.
Once done, garnish the egg rolls with fresh parsley and serve while it is still warm.
Notes
Don’t overfill the wrappers.
Press and seal the edges of the egg rolls with water to prevent the filling from coming out.
Most air fryers can fit about six egg rolls at a time. Don’t overcrowd the air fryer, and cook in batches if necessary.
If cooking in batches, keep the remaining eggrolls covered with a damp paper towel. Cooked egg rolls can be kept warm in a low oven.
Flip halfway through the cooking time.
The egg rolls will crisp up as they cool, so don’t worry if they aren’t as crispy as you expected when you first pull them from the air fryer.
Serve with a spicy Southwestern ranch dressing or cool and creamy avocado ranch for dipping.
