Healthy Oatmeal Banana Bread is a nutritious and delicious twist on traditional banana bread. This oatmeal banana bread recipe is easy to follow and uses wholesome ingredients like whole oats and honey instead of refined sugar.

Ingredients

  • 1 cup old fashioned oats or quick-cooking oats
  • 1 cup oat flour or whole wheat flour
  • ½ tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 3 medium ripe bananas mashed (or 4 small bananas)
  • cup of coconut oil melted but not hot
  • 2 large eggs
  • cup pure honey or maple syrup
  • ½ cup raisins chopped nuts, or dried currants - optional
  • ½ cup chocolate chips use mini or regular size – optional

Instructions

  • Preheat oven to 350 degrees F and grease a 9-inch by 5-inch loaf pan with cooking spray or line it with parchment paper.
  • In a large bowl, mix together mashed bananas, coconut oil, eggs and honey.
  • In a separate bowl, whisk together oats, flour, baking powder, baking soda, and salt.
  • Stir dry ingredients into the wet ingredients. Mix well to incorporate, then add in chocolate chips, nuts, or raisins, if desired.
  • Pour the batter into the prepared pan. Bake for 40-50 minutes or until the toothpick inserted comes out clean.
  • Let cool completely. Cut into slices and enjoy.

Notes

  • Use ripe bananas for sweetness and because they mash easier. You can freeze overripe bananas until you have enough for a recipe.
  • Always preheat your oven to ensure the bread bakes evenly and rises properly.
  • Line the pan with parchment paper or grease it with cooking spray or butter. This makes it easier to remove the bread once it's baked.
  • Mash bananas well to incorporate the banana flavor evenly throughout the bread.
  • Don't overmix the batter, leading to a dense and tough texture. 
  • Overbaking can result in a dry and crumbly texture, so keep an eye on the bread as it bakes.  
  • While banana bread is delicious on its own, you can add additional flavors and textures by incorporating ingredients like nuts, chocolate chips, dried fruits, or spices. Feel free to get creative and customize your banana bread.
  • Substitute the oil with Greek yogurt. It adds moisture and protein while reducing the amount of saturated fat.
