These Almond Joy Energy Balls are a nutritious and delicious version of the popular chocolate bar. They are so easy to make and there’s no cooking necessary!
½cupunsweetened coconut flakes or shredded coconut
2tbspunsweetened cocoa powder
2tspground flaxseed or flaxseed meal
½cupmini chocolate chips
¼cuplightly toasted almondschopped
¼tspsalt
½cupcreamy natural almond butter
⅓cupmaple syrup
1tspvanilla extract
Instructions
Start by measuring and prepping all the ingredients needed.
Once you have everything on hand place all the ingredients into a large bowl.
Using a spatula, or with your hands, mix everything until well combined.
Take tablespoon-sized pieces of dough and with the help of your palms tightly roll even balls. You can also use an ice cream scoop to help you have even portions.
Place rolled balls onto a sheet lined with parchment paper and chill for 30 minutes.
Once chilled place the balls into an airtight container and store them in a fridge.
Use within 5 days.
Freeze for up to a month.
Notes
If the mixture doesn’t want to stick together and roll into a ball, you can add a little more maple syrup, stir well and try rolling again. Alternatively, you can refrigerate the mixture for a couple of minutes to help them firm up a bit before rolling.
Maple syrup can be swapped with honey or agave.
Don’t want to roll them? You can press the mixture into a square pan and once they’ve chilled, cut them into squares to make them into no-bake Almond Joy energy bars.
Any creamy nut butter (such as cashew butter or peanut butter) will work in place of almond butter if needed but the flavor will change to taste like the nut butter.
