Dice the tomatoes and place in a bowl with the bulgur. Cover the bowl and let sit in the fridge for 10 minutes.

In a bowl, add the chilled tomatoes and the rest of the ingredients. Toss well.
– Do not use a food processor to chop the parsley. – Store the salad in an airtight container and it can last really well for up to 3 days.
