Bring a pot over medium heat and add the oil. Sauté the onion, celery and bell pepper.
Add in the tomato paste and sauté. Add some of the vegetables. Sauté together.
Add water and boil. Add remaining vegetables. Let it cook for more minutes.
Once the soup has cooked through, remove from heat. Allow to cool for a little before serving.
