Dice the chicken and place in a bowl. Add in the flour, corn starch, and condiments to coat the chicken.
In a deep frying pan, heat the oil. Fry the chicken until golden brown.
Whisk all the sauce ingredients in a bowl. In a pan, cook on low-heat, until thick.
Transfer the fried chicken to the sauce and mix to coat well. Simmer then remove from heat. Serve.
