This Oven Roasted Parmesan Herbed Potatoes recipe is a very simple and flavorful dish that can be served as a side with almost any dish.

Ingredients

  • 2 lbs. red baby potatoes
  • 1 tsp. salt
  • 1 tbsp. paprika
  • 1 tsp. corn starch
  • 1 tsps. onion powder
  • 1 tsps. garlic powder
  • 2 garlic cloves minced
  • 1/2 cup grated parmesan cheese
  • 2 tbsps. olive oil
  • 2 tsp. fresh cracked black pepper
  • 1 tbsp. fresh rosemary finely chopped

Instructions

  • Wash, and slice the potatoes. Rinse and pat dry.
  • Place potatoes in bowl and season with all the ingredients.
  • Line a sheet pan with parchment paper and toss the potatoes on it, leaving space between each piece
  • Sprinkle or grate some more parmesan cheese on top.
  • Bake in a preheated 400 degree oven for 30-40 minutes until tender.
  • Remove, let it cool down and serve.

Notes

  1. One you have rinsed the cut potatoes, let them dry for a few minutes. I pat them dry with a kitchen towel to move on faster with the rest of the recipe.
  2. Choose similar sized potatoes so that they cook evenly. I like to use baby potatoes that just require to be cut in half, but you can use larger potatoes and cut them into quarters.
  3. Don't be tempted to add more oil, they just need a couple of tablespoons.
