Chicken Scampi Pasta is perfect for busy weeknights and will have your family licking their plates clean. Italian seasoned chicken tenders are tossed with spaghetti and a dreamy garlic and scampi sauce. You’ll love this easy chicken dish.

Ingredients

  • 8 oz spaghetti
  • cup all purpose flour
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasonings
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 1 lb chicken tenders
  • 2 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon garlic minced
  • ¼ cup shallots sliced
  • ½ cup chicken broth
  • 2 tablespoons parsley chopped
  • ¾ cup parmesan cheese
  • Juice from ½ lemon
  • Basil to garnish

Instructions

  • Cook the spaghetti according to the package instructions. Drain the pasta water and keep it aside. (Reserve ½ cup of pasta water.)
  • In a large dish combine flour, garlic powder, Italian seasonings, pepper and salt. Dredge the chicken on both sides in the flour mixture.
  • Heat a heavy bottom skillet on a medium flame. Add the oil and cook the chicken for 6-8 minutes until the chicken is cooked through. Remove the chicken to a plate and set aside.
  • To the same skillet add the butter. Once the butter is melted add the minced garlic and shallots. Cook for a minute and pour the broth and deglaze the skillet and cook for 2-3 minutes. Check for seasoning and transfer the chicken back to the skillet.
  • After 2 minutes add in the cooked spaghetti along with the parmesan cheese. Toss until everything is well combined. (If the dish is dry add the reserved ½ cup of pasta water in this stage)
  • Garnish the scampi pasta with lemon wedges and basil before serving.

Notes

  • Dry the chicken with a paper towel before dredging in the flour and seasoning mixture and it will brown better.
  • Reserve some of the pasta water. You can use this to deglaze the pan after cooking the chicken and get all the flavorful bits into the sauce. You can also use the pasta water to loosen the sauce before serving if it is thicker or drier than desired. 
  • Add a pinch of red pepper flakes to give this dish a tiny hint of heat.
  • Add more flavor by mixing in cherry tomatoes, spinach, cooked broccoli, or toasted pine nuts.
  • Freshly shredded parmesan cheese is preferred. Pre-shredded cheeses have an anti-caking agent added that prevents them from melting as well. 
  • When choosing a wine, you should use something that you enjoy drinking, but it doesn’t have to be expensive. 
  • Butter is an integral part of this sauce, so choose high quality butter.
