Garlic Butter Mushroom Chicken Bites

These Garlic Mushroom Chicken Bites are a wonderful, flavorful recipe that the whole family will gobble up within minutes. It is quick, easy, and made in one skillet so cleaning up is a breeze. It’s such a super easy dinner option for busy weeknights.

Ingredients

  • 2 tbsps. olive oil divided
  • 1 lb boneless skinless chicken thighs cubed
  • ½ tsp paprika
  • ½ tsp Italian seasonings
  • 1 tsp garlic powder
  • ½ tsp ground black pepper
  • ½ tsp salt
  • 2 tbsp unsalted butter
  • 1 tbsp minced garlic
  • 2 cups cremini mushrooms sliced
  • cup green bell pepper cubed
  • cup red bell pepper cubed
  • Parsley to garnish (optional)

Instructions

  • Heat a medium skillet with oil, add the chicken cubes and cook for 2-3 minutes.
  • Add in the seasonings; paprika, Italian seasonings, garlic powder, pepper and salt. Mix it, transfer the chicken pieces to a plate.
  • To the same skillet add the butter. Once the butter has melted, add the garlic and bell peppers. Saute for about a minute and then add the mushrooms. Continue cooking for a couple more minutes.
  • Stir the chicken back into the skillet along with the chicken juice released while resting the chicken. Cook for 4-5 minutes until the chicken is cooked through and no more moisture left in the pan.
  • Garnish the mushroom chicken bites with fresh parsley and serve.

Notes

  • Feel free to add other veggies if you like. Some recommendations are zucchini, carrots, broccoli, cauliflower, onions, peas, and green beans.
  • Cremini mushrooms can be used in place of white mushrooms.
  • If your mushrooms have dirt on them, simply give them a brush. Avoid washing and soaking mushrooms as they’ll get waterlogged. 
  • Cut your chicken thighs into similar-sized pieces so that they cook evenly.
  • Cook the chicken in a single layer and don’t overcrowd the pan. Cook in two batches if needed.
