Watermelon Cucumber Feta Salad

This Watermelon Cucumber Feta Salad is the perfect summer dish. So simple, delicious, and refreshing, you’ll want to make this for every meal! It’s perfect for BBQs, picnics, or just an easy weeknight meal. Sweet but salty, you won’t be able to get enough of this salad!

Ingredients

  • 4 cups watermelon cubed
  • 2 small cucumbers halved and thinly sliced
  • ½ cup blueberries fresh
  • ½ cup feta cheese mini cubed, or use mozzarella cheese
  • 2 tbsp. olive oil
  • 1 tbsp. balsamic glaze
  • ½ whole lemon
  • 1 tbsp. olive oil
  • salt and cracked black pepper to taste
  • basil leaves for garnishing

Instructions

  • Place the diced watermelon, cucumber in a bowl first.
  • Add the blueberries, cubed feta, and basil leaves around the watermelon and cucumber pieces.
  • Season with fresh cracked black pepper and salt, then squeeze some lemon juice on top, drizzle with olive oil, balsamic glaze and serve.

Notes

  • Add a little crunch to the watermelon salad with a handful of toasted walnuts, pinenuts, or cashews.
  • You can add additional fruit to this such as strawberries or cherries.
  • Don’t like basil? Try adding mint to the salad!
  • If you don’t have lemon, you can swap for lime.
  • Avocado makes for a great addition to this watermelon feta salad.
  • I recommend juicing your lemon instead of using bottled lemon juice. Bottled lemon juice does not have the same bright taste to it.
  • Got a melon baller? You can make this salad look a bit fancier if you’d like to. You can even hollow out the watermelon with the baller then serve the salad inside of the empty watermelon!
