Cinnamon Streusel Coffee Cake

This super easy coffee cake is so soft and moist! All you need are a handful of simple ingredients to make this Cinnamon Streusel Coffee Cake. Perfect as a breakfast or as a dessert, this delicious cake with a streusel crumb topping is full of tasty cinnamon flavors!

Ingredients

For the Cake:

  • 3 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 stick unsalted butter melted
  • 2 whole eggs room temperature
  • 1 tablespoon vanilla extract
  • 1 ½ cup milk

For the Topping:

  • ½ cup brown sugar
  • ½ cup flour
  • 1 ½ teaspoons ground cinnamon
  • 1 stick unsalted butter cubed and cold

For the Icing:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla

Instructions

For the Cake:

  • Preheat your oven to 350 F. Spray a 9x13 pan with non-stick spray and line with parchment paper.
  • In a large bowl combine the flour, sugar, baking powder, and salt. Whisk until free of lumps.
  • In a medium bowl combine the melted butter, eggs, vanilla, and milk.
  • Mix the wet and dry ingredients until just combined.
  • Pour the batter into the prepared pan.

For the Topping:

  • In a small bowl stir together the sugar, flour, and cinnamon until fully combined.
  • Add in the butter and use clean hands to break up the butter into small pieces.
  • Spread the topping all over the top of the cake.
  • Place in oven and bake for 30-35 minutes of until a toothpick inserted into the center comes out with only a few moist crumbs
  • Remove from oven and allow to cool slightly before icing.

For the Icing:

  • Combine all of the ingredients in a small bowl until smooth.
  • Drizzle the icing over the cake.

Notes

  • Having your eggs at room temperature to help prevent lumpy batter.
  • The icing is optional! If you rather not have icing in the morning, you are more than welcome to skip it.
  • If you like extra streusels, you can definitely double up on the cinnamon streusel ingredients.
  • To check if the cake is done, insert a toothpick in the center. If it comes out clean or has just a few crumbs, it is done. 
  • To properly measure flour by the scoop, be sure to fluff the flour before spooning it into a measuring cup. This prevents the flour from being packed into a measuring cup. Level the top off inside of trying to pack it all in.
  • Be sure your oven is fully preheated before adding your cake to the oven.
  • Do not over mix the cake batter. Over mixing the batter can cause it to become dense.
