Avocado Toast with Egg- 3 Ways

This Avocado Toast with Egg is packed with proteins, healthy fats and nutrients and it's made in less than 10 minutes. You can't go wrong with this recipe and it can be enjoyed for breakfast, snack, lunch or even dinner.

  • 1 slice multi grain bread or bread of your choice
  • ½ whole Avocados mashed
  • Lemon juice to taste, in avocado
  • Salt and Pepper to taste
  • Red Pepper Flakes to taste

Fried Egg

  • 1 whole egg
  • 2 tsps. butter

Poached Egg

  • 1 whole egg
  • 1 tsp. vinegar to add in the water when you cook it

Scrambled Egg

  • 1 whole egg
  • 2 tsps. butter


  • Toast your bread in the toaster or oven.
  • Cut the avocados open and remove the seed.
  • Scoop out the avocados into a bowl, add in a splash of lemon juice, a pinch of salt, and red pepper flakes.
  • Smash your avocado with a fork to the texture you like. Leave it chunky or smash it until smooth.
  • Spread it onto your toasted bread.
  • Top with cooked eggs (see blog post). Garnish and enjoy.


  • Use thick and sturdy bread to prevent the toast from falling apart.
  • Use ripe avocados. To check if an avocado is ripe, remove the stem on top gently. If it comes out easily and the stem color is green, your avocado is ripe enough. If it's brown, it's too ripe. It the stem doesn't come out easily, it's still raw.
  • Add in flavors to your avocado, like garlic, lime or lemon juice, chili pepper, spices etc.
  • Add other toppings like jalapeño, sliced onions, smoked salmon, tomatoes etc.
  • Eat your avocado toast right after you assemble it. It will get soggy and unpleasant when left uneaten for too long.
