Baked Cranberry Brie Bread Bowl

Tart cranberry over creamy, melty brie, wrapped up in a crusty bread - what's not to love about this Baked Brie Cranberry Bread Bowl!

Ingredients

  • 1 large Boule loaf bread Italian or sour dough
  • 1 21 oz. French Brie Cheese round, rind removed
  • ½ cup cranberry sauce homemade or store bought
  • 1 tbsp. lightly flavored olive oil or melted butter
  • 1 tsp. fresh rosemary finely chopped
  • 2 tbsps. walnuts chopped, optional for garnishing before serving

Instructions

  • Preheat oven to 350 degree F.
  • Trim to remove the rind off the cheese.
  • Cut the top of the round bread (see photos) and place the package of the brie cheese to cut out to remove the center of the bread.
  • Brush the top and inside of the bread with the lightly flavored olive oil.
  • Place the brie cheese in the center of the bread bowl, top with cranberry sauce and fresh herbs. Cut the edges of the bread into slices all the down but without cutting them out. You want them to stay attached.
  • Add the cranberry sauce and fresh herbs on top of the cheese. Top the bowl with the top piece you cut off earlier.
  • Bake in the oven for 20 minutes. It may take a few minutes more depending on the size and thickness of your bread.
  • Remove and let the bread cool up for a couple of minutes. Remove the top and serve right away to enjoy it while the cheese is melty.
  • Garnish with chopped walnuts and fresh herbs if you prefer.

Notes

  • Use a preheated oven.
  • You can use whole wheat or a white loaf - whichever suits!
  • You can use the brie as a template to cut around when removing the center of the loaf.
  • Score down the side of the bread bowl. This makes it easier to pull the bread apart.
  • Be sure to remove the rind from the brie. You want it to be nice and melty!
  • You can use store bought cranberry sauce or you can make your own - like this Homemade Cranberry Sauce recipe.
  • Allow the bread to cool slightly before serving, but only slightly, you want that cheese nice and melty!
  • Top with crushed walnuts and herbs.
