Southwest Shrimp Quinoa Salad is absolutely delicious and filling. It's healthy and can be made with Chicken, or prepped as a vegetarian dish.

Ingredients

SHRIMP:

  • 1 lb. baby shrimp raw
  • 1 tbsp. olive oil
  • 1 tsp. taco seasoning
  • 1 tbsps. lemon juice

SALAD INGREDIENTS:

  • 1 cup quinoa cooked
  • 3/4 cup corn
  • 3/4 cup black beans
  • 1 cup cherry tomatoes halved
  • 1/4 cup purple onion finely diced
  • 1/2 cup green onion chopped

SALAD DRESSING:

  • 2 tbsps. lemon juice
  • 2 tbsps. olive oil
  • 3/4 tsp. salt
  • 1/2 tsp. garlic minced

Instructions

  • Cooked quinoa according to package directions.
  • Marinate the shrimp. Prepare the shrimp in a skillet until fully cooked.
  • Prepare all the salad ingredients. Place everything in a bowl and toss in with the dressing.
  • Serve and enjoy.
