3cupsof cherry tomatoesdiced ( 2 small packs, approx. 23 oz.)
1/2cupdried cranberriesfinely chopped
1/2cupgreen onionsthinly chopped
3tbsps.fresh basilfinely chopped
3tbsps.purple onionfinely diced
1/2cupfeta cheesecrumbled
3tbsps.olive oil
1tbsp.lemon juice
1/2tsp.salt
1tsp.fresh ground black pepper
2tbsps.balsamic vinegar
1tsp.dried basil
Instructions
Dice and chop all the ingredients and place in a bowl.
Add in the olive oil, spices, vinegar and salt. Mix everything together well.
Serve with toasted crostini bread.
Notes
Serve chilled. If you are not serving right away, do not mix the salad marinade until you are ready to serve it. Lasts up to 2 days in the fridge, stored air tight container.
