Roasted Parmesan Glazed Carrots

Crispy parmesan roasted glazed carrots take only minutes to prepare using simple ingredients like fresh garlic, Italian seasoning, parmesan and butter. Pop everything in the oven for golden and flavorful roasted carrots with parmesan cheese.

Ingredients

  • 2 lb carrots washed, peeled, and cut into 3-inch pieces
  • ¼ cup unsalted butter melted
  • 1 tablespoon garlic minced
  • 1 teaspoon Italian seasonings
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • ¼ cup grated parmesan cheese
  • Chopped parsley garnish

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set it aside.
  • Wash, peel the skin and cut the carrots into 3-inch pieces. Transfer them to a bowl.
  • In a small bowl, combine melted butter, garlic, Italian seasonings, salt, and pepper. Pour them over the carrots and mix them with a spatula.
  • Sprinkle the grated parmesan cheese and toss it. Spread the carrots over the prepared baking sheet and bake for 25-30 minutes until the carrots are tender.
  • Once done, sprinkle the roasted carrots with chopped parsley and serve.

Notes

  • Scrub and clean the carrots well. 
  • Finely grated parmesan works better for this recipe than shredded parmesan. 
  • Crush the Italian seasoning with your fingers to release the aroma of the dried herbs.
  • Avoiding butter? Feel free to use a light, neutral flavored oil instead. 
  • Cut the carrots into similar sized pieces for even cooking. 
  • Feel free to leave the carrots whole if you prefer. 
  • Leave space between the carrots so they roast rather than steam. 
  • Be sure to line the sheet pan with parchment paper to prevent sticking and for easy cleanup. 
  • Adjust the roasting time as needed for thinner or thicker carrots. 
  • There is no need to flip the carrots.
