Ingredients

To cook chicken

  • ½ cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons white vinegar
  • 1 tablespoon paprika
  • ½ tablespoon ground cumin
  • ½ tablespoon dried oregano
  • 1 teaspoon garlic minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • lb chicken thighs boneless and skinless

To assemble Gyro

  • 4 whole pita bread medium, thick pita
  • 4 tablespoons Tzatziki sauce
  • ½ cup cherry tomatoes halved
  • ½ medium red onion thinly sliced
  • ¼ cup crumbled feta cheese
  • Lemon wedges to serve
  • Chopped parsley to garnish

Instructions

  • In a wide bowl, combine the ingredients to marinate the chicken; yogurt, olive oil, lemon juice, white vinegar, paprika, cumin, oregano, garlic, salt, and pepper. Add in the chicken thighs and coat well. Marinade the chicken thighs for at least 30 minutes.
  • Heat a grill pan or skillet on medium heat; add the chicken thighs and cook for 4-5 minutes, flip it to the other side and cook further for 3-5 minutes until the chicken is cooked through.
  • Once done, transfer the chicken to a plate and allow them to rest for 5 minutes and then slice the chicken into strips.
  • Warm the pita bread on the stovetop or microwave. Place the pita bread on a plate and spoon some chicken strips, followed by a tablespoon of tzatziki, onions, tomatoes, feta cheese, and parsley.
  • Serve the chicken gyros with lemon wedges on the sides.

Notes

  • Marinate the chicken for at least 30  minutes, but you can go as long as overnight.
  • Use the freshest pita bread you can find.
  • Add thinly sliced cucumber, olives, roasted red peppers or chickpeas for even more toppings.
  • Warm the pita bread before assembling.
  • Don’t stuff the pita. Layer the pita with ingredients, then fold it over taco or burrito style. Wrap with a bit of wax paper and secure with a toothpick to hold everything in place.
  • Always cook chicken to a minimum temperature of 165 degrees F when checked with a meat thermometer.
  • Tzatziki sauce makes this sandwich great. Make your own or purchase a premade sauce.
  • Serve the chicken over a bed of lettuce with pieces of pita on the side for an easy on-the-go option. Or skip the pita for a low-carb meal.
