Strawberry Oatmeal Breakfast Bars

Strawberry Oatmeal Breakfast Bars are loaded with heart-healthy oats, made with fresh or frozen strawberries and contain no refined sugar. These gluten free oatmeal bars can be served warm or cold and make a delicious dessert or serve as oatmeal breakfast bars.

Ingredients

  • 2 cups rolled oats for fine texture inside use quick-cooking oats
  • 1 cup almond flour can use wheat or regular flour too
  • 1 large mashed ripe banana
  • ½ cup creamy peanut butter can use almond or cashew butter
  • ¼ cup coconut oil melted and cooled, not hot
  • ¼ cup maple syrup
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp vanilla extract
  • pinch of salt
  • cup cut strawberries frozen or fresh
  • 2-3 tbs turbinado sugar to sprinkle on top, optional

Instructions

  • Preheat the oven to 350F.
  • Line 8X8-inch square baking pan with parchment paper.
  • In a large bowl, mix together oats, flour, baking powder, baking soda, and salt.
  • In a separate bowl, place coconut oil, mashed banana, maple syrup, peanut butter, and vanilla. Mix to incorporate.
  • Pour combined wet ingredients into the bowl with dry ingredients and incorporate them all nicely with a spatula.
  • Add strawberries and gently fold them in with a spatula. Don’t mash them too much.
  • Transfer the batter to the baking dish.
  • Press down the top with a spatula, making sure the corners are as equally filled.
  • Sprinkle with turbinado sugar.
  • Bake for about 20-25 minutes or until golden brown.

Notes

  • Measure your ingredients as accurately as possible. Spoon and level rather than scooping dry ingredients. 
  • Not all oats are gluten free. Be sure to purchase certified gluten free oats if that is a concern for you. 
  • Stir in chopped nuts for even more goodness. 
  • Have a sweet tooth? Add a handful or two of chocolate chips. 
  • Line the pan with parchment paper for easy removal. 
  • Let the bars cool for at least 10 minutes before cutting them into 12 squares.
  • Don’t overbake or the bars will be hard.
