Zesty Grilled Garlic Shrimp Kabobs

Zesty grilled garlic shrimp is fiery and succulent and won’t leave you feeling guilty about returning for seconds. These healthy shrimp skewers are coated in an incredible garlic shrimp marinade that is a bit spicy, garlicky and has notes of citrus from lime juice and zest.

Ingredients

  • ¼ cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon parsley chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon lime zest
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon ground black pepper
  • 1.5 lb jumbo shrimp peeled & deveined, tail-ON
  • Lime wedges to garnish

Instructions

  • In a small bowl, whisk together the ingredients to marinate; olive oil, lime juice, honey, parsley, garlic, lime zest, salt, paprika, red pepper, and black pepper.
  • Pour the marinade over the shrimp and toss until well coated. Reserve 2 tablespoons of marinade to brush later. Allow the shrimp to marinate for at least 30 minutes.
  • Thread the shrimps on a wooden or metal skewer until the end of the skewers.
  • Place the shrimp skewers on the griddle or grill pan and cook for 4-5 minutes until the shrimp is cooked through, turning the skewers often.
  • Once done, brush the reserved marinade over the skewers and garnish the shrimp skewers with parsley and lime wedges before servings.

Notes

  • Purchase fresh shrimp or completely thaw frozen shrimp. 
  • Look for jumbo shrimp that has been peeled and deveined but still has the tails on. 
  • If using wooded skewers, soak them for at least 30 minutes and up to overnight. 
  • Marinate the shrimp for at least 30 minutes but no more than a few hours as the shrimp can become mushy. 
  • Place the shrimp in the fridge while it’s marinating.
  • Shrimp cooks quickly, so don’t walk away once you add it to the grill. 
  • Overcooking shrimp can make it tough and dry. Remove the shrimp from the grill as soon as it has cooked through. 
  • Turn the shrimp halfway through cooking.
