Ingredients

  • 2 ½ cups cooked sushi rice
  • 3 tbsp rice vinegar
  • 8 oz imitation crab chopped
  • 2 oz cream cheese at room temperature
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha
  • 2 tbsp furikake seasoning divided
  • 1 medium avocado thinly sliced
  • Chopped green onions to garnish
  • 2 nori sheets cut into squares, to serve

Instructions

  • Preheat the oven to 350 degrees F. Grease a 8X8 square pan with oil and keep it aside.
  • In a medium bowl combine cooked sushi rice and rice vinegar.Mix it well and keep it aside.
  • In another medium bowl combine imitation crab, cream cheese, mayonnaise and sriracha. Mix it well and keep it aside.
  • Now transfer the rice mixture to the prepared square pan and press the rice firmly to form a uniform layer.
  • Sprinkle about a tablespoon of furikake over the rice layer evenly.
  • Then spread the crab mixture over the rice and spread to form a uniform layer. Bake them in the oven for 15-20 minutes.
  • Once done, allow the baked sushi to rest for 10 minutes. Arrange the avocado slices on top and sprinkle with the remaining furikake seasonings. Garnish it with green onions and a drizzle of sriracha on top.
  • Slice them to equal squares and serve them on a nori sheet to enjoy.

Notes

  • Rinse the rice before cooking. This removes the starch, which can make the rice gummy.
  • Use short or medium grain rice or sushi rice.
  • Add the vinegar to the rice while it’s hot.
  • Grease the pan well to prevent the rice from sticking.
  • Allow the rice to cool before pressing it into the pan, and it will stick together better.
  • Imitation crab meat is inexpensive, but you can easily use real crab, salmon, or favorite fish.
  • Prep all of your sushi bake ingredients while the rice cooks.
  • Serve immediately for the best flavor.
