Baked Chicken Breasts with Mushrooms

Ingredients

  • 4 whole chicken breasts skinless and boneless
  • 1 tsp garlic powder
  • 1 tsp Italian seasonings
  • ½ tsp salt
  • ½ tsp ground pepper
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 medium yellow onion sliced
  • 1 tsp garlic minced
  • 8 oz mushrooms sliced
  • ½ cup low sodium chicken broth
  • ½ cup mozzarella cheese shredded
  • chopped parsley to garnish

Instructions

  • Preheat the oven to 375 degrees F.
  • Season the chicken breasts with garlic powder, Italian seasonings, salt and pepper.
  • Heat a large skillet with oil on a medium flame, add the chicken breasts and cook for 7-8 minutes until they turn golden. Transfer them to a plate and set aside.
  • To the same skillet add the butter. Once the butter is melted add in the yellow onion, garlic and mushrooms. Cook for 5-7 minutes until the mushroom starts releasing the moisture.
  • Add the half portion of sauteed mushroom mixture to a baking dish or a casserole dish and spread evenly.
  • Add the chicken breasts over the mushroom mixture.
  • To the remaining half of the mushroom mixture add the chicken broth and allow them to simmer for 2 minutes.
  • Top the chicken breasts with the remaining mushroom mixture and pour the liquid on top. Add cheese over the chicken breast and bake for 15-20 minutes until the chicken is cooked though.
  • Once done garnish the dish with chopped fresh parsley and serve.

Notes

  • You can check the doneness of the chicken by using a meat thermometer. Stick the thermometer into the thickest part of the chicken, if it reads 160 F then it’s ready.
  • You are welcome to swap your boneless skinless chicken breasts for boneless chicken thighs. Cook time will have to be adjusted if you use a different cut of meat.
  • Make sure the oven is fully heated before adding the dish into the oven. This prevents uneven baking.
  • To save time, you can buy your mushrooms pre-sliced.
  • Try to slice your mushrooms as evenly as possible so they cook evenly. Same with the chicken, try to buy chicken breasts that are similar in size so they cook evenly.
  • Feel free to add additional vegetables to this before baking in the oven! Just make sure to saute them first so the moisture content of the vegetables do not affect the bake.
