Ingredients

  • 2 cups all purpose flour
  • tbsp baking powder
  • 1 tbsp pumpkin spice
  • 1/3 cup sugar
  • 1 tbsp vanilla extract
  • ½ cup oil
  • 1 ½ cup milk
  • 1 cup pumpkin pure
  • 2 eggs
  • Oil spray for the pan
  • Cinnamon Sugar optional 

Instructions

  • In a mix bowl, whip up the eggs and sugar until you obtain a nice fluffy texture. Add in the oil, vanilla extract, milk, pumpkin pure and mix well with a whisk.
  • In another bowl, mix all the dry ingredient together and then pour over the web ingredients.
  • Heat up and donut hole pan and spray with oil spray.
  • Place a full tablespoon of batter into each hole and cook for about a minute on medium high heat and then turn over for the other side to use. I used a wooden skewer to turn the pancake bites over. Cook for another minute at least and remove from heat. Try one and make sure they are fully cooked first before removing the rest. Sometimes it may need an extra half a minute or so of cooking.
  • Once you remove them, place the bites directly into a bowl containing the cinnamon sugar mix. You can op out on this option if your  kids don’t like it or you want to minimize the sugar intake.
  • Serve with pancake or maple syrup.

Notes

Nutritional info does not include pancake or maple syrup neither does in include the cinnamon sugar macro. These are all based on individual preferences.
 
  • If you don't have a donut hole pan you can always just make mini pancakes instead.
  • Make sure you use pumpkin puree and not pumpkin pie filling.
  • If you don't have pumpkin spice, you can use a cinnamon, nutmeg, allspice mix.
  • After you add the wet ingredients to the dry, allow the pancake batter to rest for a few minutes before pouring it into the mold.
  • You can skip rolling the bites in sugar if you want to cut down on your sugar intake, they still taste awesome!
  • If you’re not sure whether your Pancake Bites have finished baking, cut one open to test its doneness.
