Ingredients

For the Crumb Topping:

  • 1 ½ cup brown sugar packed
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 2 sticks butter melted
  • 3 cups all-purpose flour

For the Cake:

  • 3 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 stick unsalted butter melted
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 ½ cup milk
  • 1 ½ cup apples diced
  • ½ teaspoon ground cinnamon

Instructions

  • In a small bowl combine the brown sugar, cinnamon, and salt.
  • Stir in the melted butter.
  • Gently mix in the flour until crumbles start to form. Be careful not the overmix. Set aside
  • Preheat your oven to 350F. Spray a 9x13 pan with non-stick spray and line with parchment paper.
  • In a large bowl combine the flour, sugar, baking powder, and salt. Whisk until free of lumps.
  • In a medium bowl combine the melted butter, eggs, vanilla, and milk.
  • Mix the wet and dry ingredients until just combined.
  • Pour the batter into the prepared pan.
  • In a small bowl combine the diced apples and ground cinnamon.
  • Spread the apples evenly over the batter.
  • Spread the crumble topping evenly over the apples.
  • Place in oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out with only a few moist crumbs
  • Remove from oven and allow to cool slightly before slicing.

Notes

  • Do not overmix the crumb topping. You want there to be some texture to the topping.
  • Cool cake completely before slicing
  • If you’d like to use a stand mixer to mix your ingredients for this apple crumb cake, be sure to not over mix your batter. Over mixing the batter will cause your cake to be tough and chewy. 
  • If your crumb topping is browning too fast in the oven before your cake is done baking, you can cover the top with tin foil.
