Ingredients

  • 1.5 lbs. large shrimp peeled, deveined and tails off
  • 1 large lime a juicy one
  • 3/4 tsp. salt
  • 2 tbsps. olive oil
  • 2 tbsps. southwest chipotle seasoning I used Dash, no salt seasoning (from Walmart)
  • 4 cloves garlic minced
  • 1/2 tsp. black pepper or more to taste
  • 1 large zucchini Cut lengthwise and sliced into 1/4 inch pieces (see photo)
  • 1 large yellow squash Cut lengthwise and sliced into 1/4 inch pieces (see photo)
  • 1 large red pepper cubed
  • 1 small onion cubed
  • 8 oz. cremini mushrooms OPTIONAL

Instructions

  • Preheat air fryer to 400 F.
  • In a bowl, marinate the shrimp with the spices, salt, garlic and olive oil. If you choose to marinate it for 30 minutes, you can do so but not required.
  • Add in the veggies and toss to mix together with the shrimp.
  • Cook the shrimp and veggies in 2 batches, each batch for 8 minutes. Open and shake the basket at least 1-2 times during the cook time. If you want them more well done, you can add 1-2 more minutes of cooking time.
  • Remove from the basket and transfer to a dish. Garnish with some fresh chopped parsley and lime wedges.

Notes

  • Use a preheated air fryer.
  • You can leave the shrimp to marinate for up to 30 mins, but it's not essential.
  • Air fryer's vary in size, cook in batches if needed.
  • If you want to control your salt content, use a low sodium chipotle seasoning (I found it in Walmart).
  • Cut your veggies into similar sizes, so they cook evenly.
  • Garnish with chopped parsley and lime wedges.
