1largered peppercubed
1smallonioncubed
8oz.cremini mushroomsOPTIONAL
Instructions
Preheat air fryer to 400 F.
In a bowl, marinate the shrimp with the spices, salt, garlic and olive oil. If you choose to marinate it for 30 minutes, you can do so but not required.
Add in the veggies and toss to mix together with the shrimp.
Cook the shrimp and veggies in 2 batches, each batch for 8 minutes. Open and shake the basket at least 1-2 times during the cook time. If you want them more well done, you can add 1-2 more minutes of cooking time.
Remove from the basket and transfer to a dish. Garnish with some fresh chopped parsley and lime wedges.
Notes
Use a preheated air fryer.
You can leave the shrimp to marinate for up to 30 mins, but it's not essential.
Air fryer's vary in size, cook in batches if needed.
If you want to control your salt content, use a low sodium chipotle seasoning (I found it in Walmart).
Cut your veggies into similar sizes, so they cook evenly.
