Ingredients

  • 4 medium Japanese Sweet Potatoes peeled
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1 tbsp. avocado oil

Sauce

  • 1 large tomato petite diced
  • 1 tbsp. olive oil
  • 1/2 small onion petite diced
  • 1 tbsp. tomato paste
  • 1/4 tsp. salt
  • 1 whole Habanero pepper finely chopped, optional to make it spicy

Instructions

  • Pre-heat air fryer to 400 degrees F.
  • Cut the potatoes into 1/4 inch thick fries. Rinse and pat dry.
  • In a bowl, coat the potatoes with olive oil, paprika and salt.
  • Line the air fryer basket with the fries, leaving space between the pieces. Do them in 2-3 batches so you don't over crowd the fryer.
  • Cook for 8-10 minutes, or until golden brown, shaking the basket half way through.
  • To prepare the sauce, sauté the diced onions with the olive oil until translucent, then add in the diced tomatoes and finely chopped habanero pepper. Sauté for a couple of minutes then add in the tomato paste and salt. Mix well and lower the heat to simmer. Cook for 8-10 minutes on low heat.
  • When both the sauce and fries are ready, serve together and enjoy.

Notes

  • Make sure to preheat the air fryer.
  • Be sure to cut your fries into similar sized slices.
  • Don't overcrowd the basket, cook in batches if needed.
  • Turn the fries halfway through cooking, for an even crispiness.
  • To check doneness you open up the air fryer and check near the end of the cook.
  • You can leave out the habanero from the sauce, if you want less heat.
