Ingredients

  • 2 large heads of broccoli cut into florets
  • 1 cup Mexican blend cheese
  • 2 large eggs whisked
  • 3/4 cup flour
  • 1 tsp. paprika
  • 3/4 tsp. black pepper
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. salt

Instructions

  • Pre-heat oven to 400 degrees F
  • Cut broccoli into floret pieces.
  • You are doing to need 3 bowls. In one you will have the flour mixture, which is the flour and spices. In a second bowl the whisked eggs and in the third bowl, the cheese.
  • Coat a piece of broccoli first with the flour mixture, then the egg wash and then the cheese.
  • Line a half sheet pan with parchment paper and place the broccoli florets on it, leaving some space between the florets.
  • Bake in the oven on the middle rack for 20 minutes or until the cheese is nice and golden. Ovens vary so use your own judgement.
  • Remove from the oven, let it cool for a minute or so before serving.

Notes

  • Use a preheated oven.
  • For the most melty cheese, shred your own! It's not essential but it will melt more evenly.
  • Make sure to cut your florets into bite sized pieces.
  • Bake your broccoli bites on the middle rack of the oven, for even baking.
  • Oven can vary so check in on the doneness of your bites.
