The kids are off of school today and I figured I should make a super quick meal since we are spending the day playing and watching TV.  So I made some Steak Fajita Foil Packs. It’s delicious and you can easily rewrap and warm them up later if you have any left overs.

HOW TO MAKE THE STEAK FAJITA FOIL PACKS

Well there isn’t a lot on how to make them. I didn’t get to take step by step photos since the kids are around but it’s pretty straight forward. Start by slicing your veggies and steak. I used 1 lb. of ribeye steak for this recipe, a small purple onion, one red, orange, and green bell pepper.

Steak Fajita Foil Packs

In a large bowl, place in the meat first. Add some olive oil, garlic, fajita seasoning, lime juice and salt then rub onto the meat very well. Add in the veggies and toss everything to blend in the veggies.

On a sheet pan, place 4 pre-cut aluminum foils (I usually buy the pre-cut paper foils from the supermarket but you can cut normal foil paper up  into 12 x 12 inches). Portion out the marinated steaks into 4 portions.  Wrap tightly to form a bowl shaped foil and cook them in a pre-heated 450 degree F oven for 13-15 minutes then switch to broil and broil them for 2-3 minutes so they obtain a nice golden color.

Remove and serve with any kind of tortillas you prefer. I also serve them with a side of guacamole and salsa because the kids love eating them with chips. You can also serve them over a salad or a healthier carb option like quinoa or brown rice or even by itself with no side carbs, depending on your preference. Ingredients

  • 1 lb. ribeye steak julienned
  • 1 small purple onion
  • 1 small bell pepper
  • 1 small red bell pepper
  • 1 small orange bell pepper
  • 1 tbsp. garlic minced
  • 1 tbsp. fajita seasoning
  • 2 tsps. lime juice
  • 1/2 tsp salt
  • 2 tbsps. olive oil
  • 4 medium tortillas

Instructions

  • Remove and serve with any kind of tortillas you prefer. 

Notes

  • For crispier steak, pound out the steak with a meat tenderizer, so they are thinner.
  • Freshly squeezed lime juice gives you the best flavor
  • You can rewrap and warm these beef fajitas up for later if you have any left overs.
  • You can let the beef marinade for longer, if you want a more developed flavor.
  • Serve with guac and flour tortillas.
